I've tried to do some super-gloss finishes in the past. You can get epoxy finishes that are one-pour affairs (with names like "Liquid glass") - you just mix the 2 parts, pour it on, and let it dry. They'll make a high-build glassy finish in one go.

Other finishes can be made glassy smooth, but they often require spraying on, then cutting back, sanding flat, and polishing, which adds up to a lot of work, although they can give a beautiful finish.

Either way, if there are voids in the wood, you should fill them first. You can do this with epoxy for a clear finish. Some finishes will also benefit from grain-filling, although I tend to just keep putting coats of my chosen finish until the grain fills. If you do use different finishes, make sure they are compatible.
