breakfast bar thoughts?

I am thinking about making this old window that sits between our old part and new reno , into breakfast bar with sliding glass panels

I dont really want to take out the reveal but will do it if deemed needed.
I am asking here for advice, material and your thoughts on how to do this.
I also have the sink pipe i have to cover, so i am thinking of a slimline cupboard under the bench top.
