leveling joists for a deck, how to

I have put the joists up but they are not all level, some joists are bowed, and because they are notched into the bearer thre is also some variation in height. Any hints/tips for power plane them back? Am I better off with string lines, or a long straight edge/level to even out the joist heights. Most of them are pretty close but I do have a couple that are out like 5mm
