Process for waterproofing shower

Hi I am new to posting here although I have been learning heaps from the forum while doing small jobs around the house (self taught) One thing I haven't tackled before is anything to do with waterproofing. I will be pulling out my old tiled ensuite shower area including floor and wall tiles. I will also be getting rid of the hob? I believe that is what it is called.
