we have a old chimney which has been converted into where the gas stove is now.
we have been battling through without a rangehood for a while now.
some sort of sheeting with small holes in it has been installed over the chimney hole to stop soot and ???? from falling through.
the chimney gap is 310mm wide , 1140 long.
i am struggling to find options to fit this gap.
thoughts?

We went through the same excercise with some additional structural changes required to our chimney alcove.
You need to look for undercupboard mount type rangehoods.
We looked at Smeg but ended up installing a Qasair executive UCH-80-1 as we have a 900mm wide oven/cooktop.
The Qasair is made in Australia, and very well made too. Both the Smeg model and Qasair are quite pricey - the UCH80 was ~$1300 :o
Westinghouse makes some undercupboard models as well, I would expect that they are more reasonably priced:

Also don't forget you will need to have a power point put up inside the chimney.

Ok here are some shots of the process we went through:
Photo 1: The original alcove, complete with cast concrete mantel.
Photo 2: Alcove after some serious concrete cutting, and cutout for new lintel to allow room for rangehood.
Photo 3: Lintel installed, plus some cement sheet for mounting the rangehood into.
Photo 4: Render going on to cover up all that cutting.
Photo 5: Hard plaster over render, plus rangehood in place complete with grubby paw prints.
And the final pics:
Photo 1: Tiles in place, cupboards and benchtops installed

I still have to build a new mantel piece to go over the whole lot, it will come down to the level of the upside-down tiles. You won't be able to see the rangehood when the mantel is in place without bending down.
This was a major job, I got a builder in to do the cutting, fit lintel, and fit the rangehood. He certainly earnt his money.

We've just purchased na under-mount rangehood for installation in a similar situation (excepet we are adding the chimney bulkhead). There weren't a lot of options, and it does depend on the size. We only have a 600mm upright cooker so we didn't need one of the big ones suitable to a 900m or bigger stove.
Blanco and AEG were the ones we narrowed it down to for us. eventually went with a Stainless Steel Blanco 53cm unit cable of moving 650m3/hr. Other brands that also did a fully concealed undermount were iLve and kleenmaid.

I am trying to do the same ATM - there used to be a wood oven in the fireplace and so there is a big slab of concrete with a hole in it where the wood oven flue must have gone through. I am interested to find out hat tradeies did you use to cut out the concrete and fit your range hood? I am in Queanbeyan next to Canberra and would appreciate your advice. Cheers Shelly
