Stumping height
What a great site!
Currently I am looking to replace my stumps with steelies but not sure how high above the ground I should go and if I need any more dug out. Will want to concrete and build under one day; the height now is about 2600 to the top of the bearers, how much do you reckon I should leave from the ground to make it legal height to allow for the concrete later and the framing etc?
Any ideas on how high the concrete needs to be above the ground level?

You need minimum 2400 ceilings for all living areas. From memory 2100 for hallways, kitchens and possibly laundries. 2100 will feel claustrophobic though. The top of your slab should be at least 50mm above ground level otherwise you may have drainage issues.

If you're looking to include a shower or toilet etc it may need to be up around the 200mm above g/l or if you're in a 'flood prone' area or the like the council will have a min. floor level height.
