Cost and considerations of high ceilings

I've bought an old house and plan to knock it down and owner build a larger new home. It will be my 2nd owner built house, having recently sold my first one a few months ago.

Possibly looking to subdivide it, but that's another story.

I'm a fan of high ceilings, so was thinking of at least 3m or 3.3m ceilings on the ground flow and 3m upstairs.

In Vic, so I'm going to build the standard stick frame house.

What are the extra cost involved for 3.0m or 3.3m ceilings, other than extra material?

I.e. are the studs walls going to cost significantly more as 45x90mm pine not available in 3.3m lengths, or they don't make plasterboards to suit 3.3m heights so it's going to have lots of off cuts. Etc etc

I understand that it's going to cost more to heat up and cool, so I'm planing to have lots of insulation and make use to passive heating/cooling.

Also if the finances permit, I would also like to have large high fixed windows, either floor to ceiling or windows that start from 600mm from the ground to 300mm from the top.
