I have just completed an extension dining table and two bench seats out of Victorian Ash for my next door neighbour. The want as much as possible to keep the white look of the timber. I think that whatever finish I apply it will darken the timber to a light brown. At the moment I am thinking of using cabots water based poly. Would appreciate any comments.
Poly is fairly clear, but does have a slight yellow tint. Polycrylic dries clearer, (MinWax), and is also water-based. The finish is the same shade as if the timber was wiped with water or white spirits. It comes in gloss, semi-gloss and satin, in cans or aerosol. As you mentioned, whatever finish you use will darken the timber a little.

Edit: I think Cabots Crystal Clear is similar, too, if it helps. Never tried it though.

What about white or hard shellac from ubeaut? Easy to repair, you can do multiple coats in one day, and comes up a treat with a final coat of eee wax or traditional wax.
