Replacing flat roof

I am about to embark on a major renovation or what used to be an old set of dog kennels. These will actually become my own personal pub. the first thing I need to do is replace the roof. The existing structure has 4 besser block walls on a concrete slab. I am thinking I want a flat roof but do not want to have any support posts inside the building. The building is 6500 x 6500 square. Can anyone suggest what the best way to support the roof is. I prefer to work with timber if I can?
