Roof trusses v Roof carpenter

Hi..I'm doing a reno' on an old place in Freo'. It's a turn of the century limestone cottage that has a sixties extension out the back. The extension has a flat skillion type roof covered with asbestos sheeting. I want to replace the asbestos, (with zincalume) and also the skillion with a tradional hipped roof .
I'm wandering what are the differences and considerations between using pre manufactured trusses for the roof timberwork or a roof carpenter to construct on site??Cheers,
