Advice on Wall Chasing /Finishing

I am seeking some advice on the how to chase a wall near the cornice. I am cack handed (lefty). Is it better to start the chase from the bottom of the wall or from the top near the cornice and down to wall plate.

I am intending to put conduit in as I will be running C-Bus Cat5 cable in.
I would also appreciate some advice on the finishing process for filling in the wall chase etc
