Replacing plasterboard walls - cornice removal?

Ladies and gents

I am thinking through how to insulate brick veneer walls. The only way in my situation - yes, I have considered the alternatives carefully - is to strip off the internal plasterboard sheeting, insulate and then re-sheet. The things we do!

All these rooms have 300mm (don't quote me on the exact size) cornices. The question is, how best to manage the cornices in the strip/replacement process?

Do I:
1. Rip the cornices off as well as wall linings, risking ceiling damage? The ceilings are in good nick, unlike some of the wall linings.
2. Cut nails/screws/cement attaching the cornices to the walls, slip new plasterboard into the gap, then re-cement the cornices and repair?
3. Cut the wall linings below the cornice, and butt join the new plasterboard below that?
4. Some other alternative?

The house was built in mid-70's, so I assume cornice cement was used and therefore clean separation from either ceiling (Option 1) or wall (Option 2) will be challenging.

Best approach?
