Setting up my gun for spraying

Hi. I'm a bit confused about how to set up my guns for spraying. I'm using a 2.5 hp compressor, spraying wattyl stylwood (lacquer) and mainly spraying small things. I have an hvlp gun which the manual says has an Operating Air Pressure of 3 bar. What does this mean ? I set the regulator at the gun to 3 bar, but when I pull the trigger and start spraying the regulator needle drops substantially (the amount depends on how the air screw is set). If I'm supposed to run it at 3 bar, does this mean 3 bar when the gun is idle, or when its spraying - ie when trigger is pulled or not ?

Also, how should the regulator on the actual compressor be set - or is it simply a matter of anything over 3 bar will do?

3 Bar while in use (spraying). Set the compressor gauge not much higher than 4-5 bar.

OK, so to maintain the pressure at 3 bar while running, I need to set the regulator on the spraygun at 4 or 5 bar when the gun is idle, and adjust the air screw so it drops to 3 bar when I pull the trigger, right ???

I need to clarify this because when set at 3 bar (spraying) it seems to be a lot of flow - just not used to it I guess.
